Oatmeal Coconut Dark Chocolate Chip Cookie Balls

These cookies combine some of my favorite foods into one cookie…oats, dark chocolate, and coconut.  They are as good as they sound, and they are made with all natural and wholesome ingredients, so I don’t have to feel guilty if I indulge in them once in awhile (which, when I make a batch of them I definitely indulge)!  They are also super easy to make, and only require one bowl, so clean-up is a breeze.

Oatmeal Coconut Dark Chocolate Chip Cookie Balls

Ingredients
  1. 3 cups oats
  2. 1 cup spelt flour
  3. 1 cup unsweetened coconut
  4. 1/2 cup coconut sugar
  5. 1 tsp baking soda
  6. 1/2 tsp salt
  7. 2 eggs
  8. 1/2 cup unsweetened almond milk
  9. 1/2 cup coconut butter, melted
  10. 1/4 cup pure maple syrup
  11. 1 tsp vanilla
  12. 1 cup dark chocolate chips
Instructions
  1. Preheat oven to 350 degrees
  2. Combine all dry ingredients in a large bowl (first 6 ingredients)
  3. Add eggs, almond milk, coconut butter, maple syrup, and vanilla to dry ingredients and mix well
  4. Refrigerate dough for 15 minutes
  5. Stir in chocolate chips
  6. Roll dough into balls and place on cookie sheet
  7. Bake for 10-12 minutes
Notes
  1. Coconut oil may be substituted for coconut butter, but the coconut flavor will be more subtle in the cookies.
