Happy Monday evening! Today’s post is a little bit late – so sorry. I was out-of-town without internet access for the weekend, even though I was told I would have access. I was a little annoyed, but it was actually fabulous to unplug for awhile and enjoy my family and the outdoors. We had a blast! I hope you all had a safe and fun weekend as well.
When we got home from our trip, the entire family was hungry – of course, and my fridge was almost barren, for obvious reasons…but I did have some apples and the few ingredients needed to whip up this yummy dip, which was perfect to hold over my kids until my creative juices started flowing to figure out what we were going to eat for dinner – I didn’t get too far, we ended up with eggs and toast :).
Anyways, back to the dip. I love it! It’s easy to throw together, and is sweet and creamy enough to get me through the afternoon lull. This recipe is for one serving, but feel free to double or triple it, so you can share with others. It is great to take to parties and serve to a crowd. I use peanut flour because it mixes in super easy, but natural peanut butter would work as well.
