If there are any of you out there, that has a little one that is obsessed with Sophia the First on the Disney Channel, than you would understand the reference of Jiggly Wiggle Pudding (aka Chocolate Chia Pudding)…and yes there is a little bit of a back story to this recipe.

My little girl asked me the other day if she could have some Jiggly Wiggly Pudding, being the savvy mom that I am, I knew that Jiggly Wiggly Pudding is a dessert that they have in the show Sophia the First.  I told her I would make some for her a little bit later.  As I was brainstorming healthier alternatives to traditional chocolate pudding, I instantly thought of my good friend that I like to refer to as “super mom,” because she really is a super mom.  She is the MASTER at getting her kids to eat healthy, I don’t know how she does it, and I am always impressed and inspired by her.  Anyways, she had told me about the super easy chocolate chia pudding she had made her boys, so I used her recipe, served it to my little girl – telling her it was Jiggly Wiggly Pudding (just like what Sophia eats), and she ate it, and she liked it!  It made me feel like a super mom – at least for a minute…so a special thanks to my beautiful friend.

This recipe is made with two ingredients – yep two…This isn’t the healthiest version of chia pudding out there, but it’s good enough for me, because my kids will eat it…and full disclosure, I don’t like chia pudding – I know the horror!  It’s nothing specific against chia pudding, I don’t like any pudding, and never have – it’s a texture thing I guess.  Anyways, that means that this recipe is specifically for my kids (although don’t let that stop you from hiding it from your kids to enjoy by yourself), so two ingredients is my kind of recipe!

Happy Monday evening!  Today’s post is a little bit late – so sorry.  I was out-of-town without internet access for the weekend, even though I was told I would have access.  I was a little annoyed, but it was actually fabulous to unplug for awhile and enjoy my family and the outdoors.  We had a blast!  I hope you all had a safe and fun weekend as well.

When we got home from our trip, the entire family was hungry – of course, and my fridge was almost barren, for obvious reasons…but I did have some apples and the few ingredients needed to whip up this yummy dip, which was perfect to hold over my kids until my creative juices started flowing to figure out what we were going to eat for dinner – I didn’t get too far, we ended up with eggs and toast :).  

Anyways, back to the dip.  I love it!  It’s easy to throw together, and is sweet and creamy enough to get me through the afternoon lull.  This recipe is for one serving, but feel free to double or triple it, so you can share with others.  It is great to take to parties and serve to a crowd.  I use peanut flour because it mixes in super easy, but natural peanut butter would work as well.
