A Twist on Tuna Salad

Happy Friday to you all.  I have a quick, simple, and easy recipe to share with all of you today.  It’s nothing fancy, but sometimes it’s nice to throw together lunch in less than five minutes…Now, if I had to choose one food to eat every day for the rest of my life – it would definitely NOT be tuna…but I do enjoy a tuna salad once in awhile.  It makes a fast, easy, and nutritious lunch or dinner.  I took the mayonnaise out of my tuna salad recipe and replaced it with heart healthy oil,  lemon juice, and herbs, so yummy!  I like to eat my tuna over a bed of spinach with cherry tomatoes and avocado on the side.  My hubby and kids like the traditional tuna melt.
