Many years ago, I created a “healthy” pumpkin donut hole recipe, and by healthy, I mean the lowest possible amount of calories…so yes, it was full of artificial sweeteners.  I decided I should revisit my archived recipe, and see if I could truly make it a healthy pumpkin donut recipe.  Wow, am I glad I did, because these Pumpkin Spice Donuts are GOOOOOOOD!  And no, I am not over dramatizing them!

I cut out the artificial sweetener from my previous recipe, made a few other modifications, and popped these babies out of the oven!  They are made with whole grains, no refined sugar, and are vegan friendly.  They are the kind of donut you can eat for breakfast and not feel bad about it, but they are sweet enough to eat for dessert as well.  My kids also ate them right up, my 2 year old couldn’t get them into his mouth fast enough – it was actually really funny to watch him.  My five year old LOVED dipping them in hot chocolate, and pretty much thought I was the best mom ever when I let her have them as her evening treat – which is totally worth it to me!  They would be a really fun treat to make for all of the upcoming Halloween parties, both for adults and kids.  Plus, who can turn down a pumpkin donut?

Ingredients
  1. 1 3/4 cup spelt flour
  2. 2 tsp baking soda
  3. 1/2 tsp salt
  4. 1/2 tsp cinnamon
  5. 1/2 tsp nutmeg
  6. 1/2 tsp allspice
  7. 1/8 tsp ground cloves
  8. 1/3 cup unsweetened applesauce
  9. 3/4 cup puree pumpkin
  10. 1/2 cup coconut sugar
  11. 1 tsp vanilla
  12. 1 Tbsp flaxseed
  13. 1/4 cup pure maple syrup
  14. 1/4 cup milk of choice (I used almond milk)
  15. Coconut sugar to sprinkle on donuts
Instructions
  1. Preheat oven to 350 degrees
  2. Combine the dry ingredients in a large bowl (flour, baking soda, salt, and spices)
  3. Add the remaining ingredients to the dry ingredients and mix well
  4. Spoon into well greased donut baking pans (or mini muffin tin to make donut holes)
  5. Bake 15-20 minutes or until toothpick comes out clean
  6. Remove from oven and allow to cool slightly
  7. Once cool enough to handle, remove from baking pan and sprinkle with coconut sugar
