Protein Packed Chicken and Broccoli Quiche


I love quiche, but I don’t love that most quiche recipes are laden with heavy cream, cheese, and butter.  My recipe is a much lighter version that is packed with protein, so one serving will leave you satisfied.  This recipe can also be made without the crust if you are in a hurry, but if you are like me and prefer your quiche to have a crust, use my pie crust recipe here.

Protein Packed Chicken and Broccoli Quiche

  1. 1 cooked pie crust (optional)
  2. 12 egg whites
  3. 3 whole eggs
  4. 1/2 cup almond milk
  5. 2 heaping cups broccoli slaw
  6. 1 small onion, diced
  7. 6 ounces shredded chicken
  8. 1/2 cup shredded cheddar cheese
  9. 1 tsp coconut oil
  10. 1 tsp salt
  1. Preheat oven to 350 degrees
  2. In large pan, melt the coconut oil, and saute the broccoli slaw and onions until onions translucent (3-5 minutes)
  3. Whisk together the egg white, eggs, and salt
  4. Pour egg mixture into prepared pie crust
  5. Add broccoli slaw and chicken
  6. Sprinkle cheese over the top
  7. Bake 35-45 minutes
  1. If you are using my pie crust recipe, bake for 10 minutes
  2. Make sure you are using a 9 inch deep pie dish. All of the ingredients will not fit in a shallow one.
