Coconut Flour Pancakes With Homemade Fruit Syrup


I have been on a pancake kick lately, and these Coconut Flour Pancakes with Homemade Fruit Syrup are fabulous.  They are made with high fiber coconut flour, contain protein and healthy fats, and are super filling.  This single serving recipe leaves me satisfied all morning long (something traditional pancakes would not be able to do).  I like to top them with this super yummy homemade fruit syrup, but pure maple syrup, honey, or yogurt would be yummy as well.

Coconut Flour Pancakes

For the Pancakes
  1. 1/4 cup coconut flour
  2. 1/4 cup almond milk
  3. 4 egg whites
  4. 1 Tbsp almond butter
  5. 1 packet stevia (optional)
For the Fruit Syrup
  1. 1/3 cup mixed berries
  2. 1 Tbsp pomegranate juice (pineapple or apple juice works as well)
  3. 1-2 Tbsp pure maple syrup (or stevia)
For the pancakes
  1. Mix all ingredients together until smooth
  2. Pour into a greased skillet over medium heat
  3. Flip after 1-2 minutes of cooking
For the Syrup
  1. Combine all ingredients in a blender and blend until desired consistency is reached
  1. These pancakes take a little bit longer to cook than traditional pancakes
  2. These make 2-3 denser pancakes (which is how I like them). If you prefer a thinner pancake, add more milk 1 tbsp at a time until desired consistency is reached
  3. The batter needs to be mixed well, it takes a little bit of time and arm muscle, but it will smooth out.
