Cake, for breakfast, yes please.  Honestly, who is going to turn down cake for breakfast, certainly not anyone with a sane mind; full disclosure – I would probably turn down a piece of cake stacked with frosting, not because I wouldn’t want to eat it, but because I would be trying to make healthy choices to get my day started – I know, LAME…but I wouldn’t turn down this cake for breakfast.

Cinnamon Spice Breakfast Cake

This Cinnamon Spice Breakfast Cake is a light and fluffy cake, that is lightly sweetened, and perfectly seasoned.  It is also made with whole grain spelt flour, no refined sugar, and is vegan…so I can eat it and feel good about making a healthy breakfast choice.  In other words – “I can have my cake and eat it too” – sorry, I couldn’t help myself, I had to throw that in :).

This cake is also great for brunch, Mother’s Day, or Christmas morning.  The entire family will love it, and you can feel good about starting their day off with something that has a little bit of nutritional value, because, let’s be honest, they aren’t going to get any the rest of the day, especially on a holiday :).  Don’t wait for a holiday or special occasion to make this, it taste just as good on a regular weekday, and is super easy to throw together.

For the Cake
  1. 2 cups spelt flour
  2. 1 Tbsp ground flaxseed
  3. 1 tsp salt
  4. 1 tsp baking soda
  5. 1 tsp nutmeg
  6. 1/8 tsp cloves
  7. 1 tsp cinnamon
  8. 1/2 cup coconut sugar
  9. 1/3 cup coconut oil, melted
  10. 3/4 cup milk (I used unsweetened almond milk)
For the Topping
  1. 1 Tbsp coconut oil
  2. 1/4 cup oats
  3. 2 Tbsp coconut sugar
  4. 1 tsp cinnamon
Instructions
  1. Preheat oven to 400 degrees
  2. Shift together all of the dry ingredients in a large bowl
  3. Add in the wet ingredients and mix well
  4. Pour the batter into a well greased 8x8 baking dish
  5. Mix together the ingredients for the topping until a rough crumb mixture is formed
  6. Sprinkle over the batter
  7. Bake for 20-25 minutes
