It’s no secret that I LOVE salads.  They are my favorite lunches.  They are simple, filling, nutritious, and delicious; does a lunch get any better than that?  I tend to get into salad ruts, eating the same salad for weeks at a time, eventually I get tired of it and then move onto the next salad; and I think I have just found a new favorite…This Chopped Super Foods Salad with Citrus Dressing.  It is so dang tasty!

I never realized that I liked raw brussel sprouts until I chopped them up and put them in a salad.  I love it!  If you haven’t tried it, don’t judge until you do.  It really is yummy!  This particular salad is a melting pot of cruciferous veggies including kale, brussel sprouts, cabbage, and broccoli slaw.  When you top all those awesome veggies with pecans, apples, and craisins you create a beautiful salad bursting with nutritional goodness!  As if that wasn’t enough, you then top the salad with a sweet, tangy, and slightly savory citrus dressing.  It just seems to compliment all of the flavors perfectly.  It’s the perfect salad to bring to a get together, or enjoy for a healthy lunch!

For the Salad
  1. 1 cup chopped brussel sprouts
  2. 1 cup chopped kale
  3. 1 cup chopped cabbage
  4. 1 cup broccoli slaw
  5. 1 large apple, chopped
  6. 1/3 cup craisins
  7. 1/3 cup pecans
For the Dressing
  1. 1 tsp orange zest
  2. Juice of 1 orange
  3. Juice of 1 lemon
  4. 1/4 cup olive oil
  5. 3 Tbsp Greek yogurt
  6. 2 Tbsp water
  7. 1 1/2 Tbsp pure maple syrup
  8. 1 tsp dijon mustard
  9. 1/2 tsp salt
  10. 1/2 tsp onion powder
  11. 1/4 tsp garlic powder
  1. Toss together all of the salad ingredients (you can buy some of the ingredients pre-chopped, or I find the easiest way to chop them is a mandoline or food processor)
  2. Add all of the ingredients for the dressing to a mini food processor or blender and blend until smooth
  3. Add dressing to salad and toss until well coated (add the dressing slowly until desired amount is reached)
