Do you wish you could eat dessert for breakfast? I know I wouldn’t mind it…well lucky for you (and me) I have this recipe to share with all of you, it makes you feel like you are eating dessert for breakfast, except it’s full of heart healthy grains, healthy fats, protein, and contains no refined sugars or artificial colors and flavors (as so many sweeter breakfast options have). I have highlighted it in my last two What I Ate Wednesday posts, so I figured it was time to share.
I really shouldn’t call it a recipe, since it’s just taking my Basic Overnight Oats recipe, and adding; 1 Tbsp cocoa powder, 2 Tbsp peanut flour (or 1 Tbsp natural peanut butter), and sweetener of choice (I use 1 packet of stevia). That’s it! Does it get any easier (and yummier) for breakfast?
I like to use peanut flour in this recipe, it’s easier to stir in and provides a uniform flavor, but it’s not necessary. If you don’t have any, natural peanut butter works just as well, and you’ll use a little bit more arm muscle when mixing it all together :). I also like to add banana slices on top, once again, it’s optional…but highly recommended!
- Basic Overnight Oats
- 1 Tbsp cocoa powder
- 2 Tbsp peanut flour (or 1 Tbsp natural peanut butter)
- Sweetener of choice (I used 1 packet stevia)
- Sliced bananas
- Once the basic overnight oats have set overnight add the remaining ingredients, except for the banana
- Stir until well combined
- Add banana slices on top
