Chocolate Chip Almond Cookies

One of my favorite food combinations is dark chocolate and almonds – ever tried dark chocolate covered almonds…if you haven’t DON’T, you won’t be able to stop eating them, and I don’t want you cursing me when you have a tummy ache due to addictive deliciousness overload….Anyways, since I love the dark chocolate and almond combination, and I LOVE cookies, I decided to combine the two (it was kind of a no brainer).  The end result is these insanely delicious Chocolate Chip Almond Cookies.

Not only are these cookies delicious, they are also made with high protein almond flour, gluten free, grain free, and vegan…basically it is a cookie you can feel good about eating.  I love those types of cookies – like seriously love them!  They are also a great treat to take to your favorite gathering (such as the upcoming super bowl).  I don’t know about you, but I want to eat treats with everyone else when I am at fun get togethers, but I don’t want to completely derail my healthy eating goals – which is why I love these types of cookies.

Ingredients
  1. 2 cups almond flour
  2. 1/2 cup arrowroot powder
  3. 5 Tbsp coconut flour
  4. 1 Tbsp flaxseed
  5. 1 tsp baking soda
  6. 1/2 tsp salt
  7. 1/4 cup coconut sugar
  8. 1/4 cup pure maple syrup
  9. 1/2 cup almond milk
  10. 1 tsp vanilla
  11. 1 tsp apple cider vinegar
  12. 1/2 tsp almond extract
  13. 1/2 cup dark chocolate chips
Instructions
  1. Preheat oven to 350 degrees
  2. Shift together the almond flour, arrowroot powder, coconut flour, baking soda, and salt
  3. Add the remaining ingredients (except the chocolate chips) and combine well
  4. Stir in the chocolate chips
  5. Roll approximately a Tbsp sized amount of dough into a ball and set on a baking sheet lined with parchment paper
  6. Gently flatten the cookie with the palm of your hand or the back of a spoon
  7. Bake 10-12 minutes
