Basil Garlic Vinaigrette

I rarely get tired of salads (there are just so many yummy combinations), but I do get sick of dressings, and am always experimenting with different flavor combinations.  This particular one is a new favorite.  I even made a double batch the other day (something I rarely do), so it would last longer.  I can’t seem to get enough of it, as demonstrated in my past two What I Ate Wednesday posts (here and here).  I am loving it with mixed greens, strawberries, blueberries, and gorgonzola cheese.  Simple but delicious.  I highly recommend whipping up a batch to enjoy with a refreshing summer salad.

Basil Garlic Vinaigrette

Ingredients
  1. 1/4 cup apple cider vinegar
  2. 1 1/2 Tbsp olive oil
  3. 1 Tbsp lemon juice
  4. 1 Tbsp minced garlic
  5. 2 tsp dijon mustard
  6. 1 1/2 tsp basil
  7. 1/2 tsp salt
  8. 1/4 tsp pepper
  9. 1 packet stevia
Instructions
  1. Place all ingredients in a blender or mini food processor and blend until ingredients are combined
  2. Serve over your favorite salad
