4 Fall Inspired Overnight Oat Recipes

You are all in for a treat today, thanks to my beautiful sister-in-law (my brother really married well)!  She text me a few days ago with a request, and as you well know, I LOVE requests.  She wanted some new overnight oat recipes, and I thought, what a great idea.  I love my Chocolate Peanut Butter Overnight Oats, but it was time to mix things up a bit.  Consequently, I have been taste testing all sorts of overnight oats concoctions, and came up with 4 that are AWESOME!  I would tell you which one is my favorite, but I really can’t because I love them all.  They are all inspired by the lovely flavors of fall, which I happen to LOVE!!!!  Like really really LOVE!  Like if I had to prioritize my loves in life it would be my faith, my family, and fall flavors…Ok, that might be a slight exaggeration, but only slight.

Anyways, these recipes can be interchanged with two different base recipes.  Either my Basic Overnight Oat recipe or this Vegan Overnight Oat recipe.  I like them both.  It just totally depends on personal preference.

Basic Vegan Overnight Oats

Ingredients
  1. 1/2 cup old fashion oats
  2. 1 Tbsp chia seeds
  3. 3/4 cup milk of choice (I used unsweetened almond milk)
Instructions
  1. Mix all ingredients together in a bowl
  2. Cover and refrigerate overnight
  3. Add toppings of choice in the morning

Pumpkin Pie Overnight Oats

The first recipe in the line-up is Pumpkin Pie Overnight Oats.  Really can anyone complain about eating pie for breakfast?

Pumpkin Pie Overnight Oats

Ingredients
  1. Basic Overnight Oats or Basic Vegan Overnight Oats
  2. 1/4 cup pumpkin puree
  3. 1/4 tsp pumpkin pie spice
  4. 1-2 Tbsp pure maple syrup (or sweetener of choice)
  5. 1 Tbsp Pecans (optional)
Instructions
  1. Mix all the ingredients together and enjoy

  1. Add these ingredients after the oats have soaked overnight

Cinnamon Spice Overnight Oats

Second on the list is Cinnamon Spice Overnight Oats.  This recipe reminded me of my childhood.  I ate a lot of oatmeal growing up, and one of my favorite flavors was cinnamon spice.  It is also the simplest to make, and my husband loved it (he helped me taste test :).

Cinnamon Spice Overnight Oats

Ingredients
  1. Basic Overnight Oats or Vegan Basic Overnight Oats recipe
  2. 1/4 tsp cinnamon
  3. 1/4 tsp vanilla
  4. 1/8 tsp nutmeg
  5. 1 pinch cloves (approx 1/16 tsp)
  6. 1-2 Tbsp pure maple syrup (or sweetener of choice)
Instructions
  1. Mix all ingredients together and enjoy

Apple Cinnamon Overnight Oats

Third is Apple Cinnamon Overnight Oats.  This recipe is slightly more involved.  It calls for sautéing the apples before adding them to the oats, but that only takes a minute or two, so it really isn’t hard…and you could always skip that step and throw the apples in raw if you are in a hurry.  I left these oats sweetened completely by fruit, but feel free to add a drizzle of maple syrup if you feel it needs a little bit extra sweetness.

Apple Cinnamon Overnight Oats

Ingredients
  1. Basic Overnight Oat or Basic Vegan Overnight Oat recipe
  2. 1/4 cup unsweetened applesauce
  3. 1 Tbsp raisins
  4. 1 Tbsp walnuts
  5. 1/2 small apple (I used a small gala), diced
  6. 1/4 tsp cinnamon
  7. 1/2 tsp coconut oil
  8. 1-2 Tbsp pure maple syrup (optional)
Instructions
  1. Melt the coconut oil in a small pan
  2. Add the diced apples and cinnamon and saute until apples are warm and softened (1-3 minutes)
  3. Add all the ingredients to the overnight oats and enjoy
Notes
  1. Add the toppings to the overnight oats after they have soaked overnight

Pear and Goat Cheese Overnight Oats

Finally is the Pear and Goat Cheese Overnight Oats.  These are just awesome.  Pear and creamy goat cheese together is one of my favorite combinations, especially when you add a drizzle of honey.  It sounds weird, but it’s delicious!  If you are looking for strictly vegan overnight oats, this is obviously not the recipe for you (the other 3 can be made vegan)  :). 

Pear and Goat Cheese Overnight Oats

  2. 1/4 large pear, diced
  3. 1 Tbsp crumbled goat cheese
  4. 1/2 Tbsp honey
  5. 1 Tbsp walnuts

  1. Mix all ingredients together and enjoy!
